Ask your local beer supplier for a recommendation. If they're uncertain, search for companies in the phone book under "Fire and Safety Equipment" or "Fire Extinguishers." Those that refill fire extinguishers will usually refill CO2 cylinders as well.
At what pressure should I set my CO2 beer regulator for optimum performance?
Most U.S. breweries recommend keeping CO2 pressure between 12-14 pounds for ale and lager draft beers. This will maintain the proper level of carbonation as specified by the brewery. If you're purchasing a specialty beer and are unsure of the correct carbonation level, simply ask the company you bought the keg from. If they don't know, they can make a quick call to the brewery to find out.
How long can I expect a keg of draft beer stay fresh?
Keep in mind that draft beer has a relatively short shelf life and should be consumed while the flavor is still optimal. If the proper temperature and pressure is maintained, keg beer that is dispensed with CO2 will remain fresh within the following time frames:
Non-pasteurized draft beer: 45-60 days
Pasteurized draft beer: 90-120 days
